要如何挑選好吃竹筍:
1.駝背的,最好:尾端看起來厚實且鈍,又彎彎的最好,長得越直的,帶苦的可能性越高
2.竹筍外表不能有肉瘤:有肉瘤代表內質纖維已老化
3.筍尖不能有綠色:有綠色代表筍尖已經進行光合作用,會產生苦味
做法:
1.將竹筍的凹面朝上,用菜刀的尾端,從底部質切約2/3下去
2.將刀面往外一扳,往中間處橫剁一刀
3.用手扳開筍皮,輕輕往下一折,就可順利去皮,並保持筍肉完整
4.直接去除根部老化部分,在削去薄薄一層筍尖外皮即可
水煮烹調的話時間不要太久,一支五兩重的大約煮5分鐘就好了,以免流失本身的脆度
及清甜
若買到帶苦味的,覺得丟掉浪費,可以煮熟一點,將肉質黃色部分用刀子切掉,再切成薄
一點的塊狀,重新煮過,苦味就會快速消除
若還有苦味,就用清水再煮一次,雖會失去原有清甜,但可以吸收到纖維質也不錯啦
煮熟的竹筍除了冰鎮後沾美乃滋吃,也可以換換口味:
1.切乘細絲,炒豬肉絲或牛肉絲,喜歡辣味也可加辣椒絲
2.切成滾刀塊,加入排骨燉成湯品
3.炒鍋加入少許沙拉油燒熱,放入雪裡紅末,炒至水分收乾.香味散出,再倒入熟筍丁拌炒
入味,吃起來很下飯
