源自三峽的海爺,有著一把川菜骨。以學川菜出身的老闆,最拿手菜式就是自創的
「紅油皮蛋」。
將此菜式結合乾麵後,被老客戶形容如同吸毒式上癮,而毒品中最易上癮的海洛因,
便是俗稱四號。以此為創意延伸為店名。
許多報章雜誌跟美食節目都有採訪過。
生意非常好,每次來都要排隊。
內用外帶都要等,櫃檯拿菜單點餐後,再等待店員叫號帶位。
內用有冷氣,大概30個位置,每次來都是跟別人併桌。出菜速度很快,雖然要候位,
但從遞單到上菜不超過半小時。
菜單。主菜約50~70元,基本小碗乾麵才35元,以台北物價來說非常不可思議便宜。
小菜有許多種選擇,除了螺肉50元外,其他均一價30元。
豬肝30元。
友人特別愛吃他們的豬肝,每次來必點。
麻油與豬肝拌和,提味柔嫩口感美味。
麻瓜乾麵 (小) 60元
瓜仔肉甜香爽口,家裡奶奶也常蒸這道料理,所以吃來格外有種家鄉味。
醬料份量充足,與柔軟的全麥意麵攪拌後,每口都吃的到好滋味。
四號乾麵 (大) 80元
店裡的特色招牌麵,紅油皮蛋切成丁狀鋪滿,第二層則是香醇稠密的麻醬醬料。
攪拌後,紅油的微辣提味豬絞肉、皮蛋的特殊Q彈口感與麻醬香氣充分融合,
三重奏的組合配上帶嚼勁不軟爛的全麥意麵,十足美味!
在台灣大街小巷已常見的麵食料理中,海爺開創出了一種新的類型乾麵,讓人回味無
窮會願意一再回訪。
