萬華涼粉伯 女兒傳承古早味
〔記者蔡明倫/台北報導〕七十歲的萬華「涼粉伯」,五十多年來每天推著推車、搖著銅
鈴,在大街小巷叫賣的身影,是萬華老一輩人的記憶;如今涼粉伯的招牌已交到女兒辜凱
鈴手上,不同的年輕面孔,相同的是對傳統手工製作的堅持,就是為了保存難得的古早味
。
推車搖鈴 賣50多年養家活口
萬華「涼粉伯」的小攤子位在西昌街和貴陽街口,濃醇的麵茶粉及Q彈的涼粉,是不少萬
華人一吃幾十年的在地點心,涼粉伯也靠著這個攤子養活一家大小;三年前,他手受傷無
法繼續工作,女兒辜凱鈴不忍傳統技藝因此斷送,選擇接棒。
涼粉攤上午十點營業,辜凱鈴每天四、五點就得起床,將地瓜粉和水加熱,用木棍不停地
攪拌,直到變得Q彈,而沾粉用的麵茶也是手工下去炒,繁重的程序常讓她身體吃不消,
有一次花了兩週休養。
女兒接棒 捨生技業守護傳統
雖然辛苦,辜凱鈴還是堅持傳統製法,她坦言,一開始並不順利,因為之前從事生技業,
比較注重原料品質,價格較高,較不被老一輩人接受。後來透過臉書宣傳,得到許多年輕
人支持,才漸漸被廣為接受,甚至有老人家在地上寫了一首詩鼓勵她,讓她深受感動。
即使涼粉伯退休了,許多顧客還是會關心他的身體狀況,也讚許辜凱鈴能夠接下攤子,這
些關心與支持,是讓她繼續做下去的動力,她驕傲地說:「全台北市大概只剩我們這一攤
保留這樣的古早味了。」
