酒的種類可分三大類
蒸餾酒:
把釀造酒再經過蒸餾製成的酒。例如:米酒、高粱酒、威士忌、白蘭地等。蒸餾後酒量會少很多,以白蘭地來說,大約要八桶葡萄酒,才能蒸成一桶白蘭地;但是酒精濃度則會提高,米酒的20%還算低,陳年高粱酒、大麴酒的酒精濃度都在60%以上呢!
再製酒:
由於酒精是一種很好的溶劑,所以如果蒸餾酒中加入香料,就會變成一種有香味的酒,也叫「合成酒」,酒精濃度比蒸餾酒低一點。例如:五加皮酒、蔘茸酒、竹葉青、烏梅酒、金棗酒、琴酒等。

由穀物、水果發酵、陳熟(把酒裝甕或裝桶存放,讓酒成熟,喝起來會順口)製成的酒。例如啤酒、紹興酒、紅露酒、清酒、葡萄酒等。這種酒的酒精含量不太高,最低的啤酒只有2~3.5%,最高的陳年紹興則是18%

Chase brewage again after the wine distiled to make into.For example:Rice wine, kaoliang wine, whisky, brandy...etc..The capacity for liquor will be a lot of after distiling few, say with the brandy, about want eight wines, can steam into a pail of brandy;But the alcohol density then will raise, 20% of rice wine is still on the whole low, the alcohol densities of old kaoliang wine, big Qu wine all in above 60%!

Because the alcohol is a kind of good melting agent, so if distil to join spice in the wine, will become a kind of wine with flavor, is also "synthesize wine", the alcohol density ratio distils wine a little bit lower.For example:Five add a skin wine, the wine of Shen Rong, bamboo green, black plum wine, the wine of gold Zao, gin etc..

The corn, fruit ferments, Chen2 Shou2(pack the jar to the wine or pack a bucket to store, make the wine mature, drinking will be easy to read) make into of wine.For example beer, Shaoxing, red dew wine, sake, wine...etc..The alcohol content of this kind of wine isn't that high, the lowest beer only has 2~3.5%, and the highest old Shaoxing is 18%

The kind of the wine can divide into three big classes
Spirit:
Pass making the wine the wine that the distillation made into. For example: Rice wine , Chinese sorghum wine , whiskey , brandy ,etc.. Capacity for liquor will be less much after the distillation, as to brandy , it could steam into a barrel of brandy to probably want eight barrels of grape wine; But the thickness of alcohol will be improved, 20% of the rice wine is fairly low, the Chinese sorghum wine of many years' standing , thickness of alcohol of the big Qu's wine are above 60% !
And then make wine:
Because the alcohol is a kind of very good solvent, put into the spices in Spirit, will turn into a kind of wine with fragrant smell , let too ' formate the wine ', the alcohol is a bit lower than Spirit in thickness. For example: Slender acanthopanax bark spirit , fine and soft wine , Bamboo Leaf Green , dark plum wine , gold date wine , musical instrument wine , etc..
Make the wine:
By grain , fruit ferment , old and well done (fill a wine cup for sb. and puts the urn or puts the barrel to preserve, make wine to be ripe, is it can stand up ) wine that make smoothly to drink. Such as beer , Shaoxing wine , red rice wine , Japanese Rice Wine , grape wine ,etc.. The content of alcohol of this kind of wine is not very high, the lowest beer is only 2.5%, the highest Shaoxing of many years' standing is 18%
