老夫子甜不辣位在屏東太平洋百貨附近的巷弄裡,平常人潮就不少,遇到放學或
用餐時間,小攤子前更是擠滿點餐的客人。
臺灣之所以有黑輪的飲食習慣,主要來自日本殖民之故,原先日本的黑輪湯底是
以昆布為主,但礙於物質缺乏,所以臺灣自行研發使用蕃茄醬、糖、辣椒醬混合
,又甜又辣,販賣黑輪又常跟天婦羅搭配一起,據傳有人就把黑輪沾醬的這食物
稱為甜不辣,跟天婦羅的日本發音相同。

店裡可以自己挑選食物,也可直接叫店家搭配好的綜合甜不辣。綜合甜不辣一碗
從30元到60元都可以選擇,這次點了30元和50元各一碗,另外再加點炸物棒棒腿
、海鮮捲跟旗魚黑輪。
三碗一共120元,清湯不限,可自行取用。上桌前店家會先加好醬油膏,甜甜的不
死鹹,桌上也有微甜的紅甜醬,一起沾取風味更上一層,但不建議加太多以免搶
走食材原本的鮮度。
50元跟30元的內容物都差不多,不過50元那碗有多兩顆高麗菜捲
高麗菜捲滿有味道,菜葉煮得很透,但卻不爛,蔬菜的纖維仍在,需要花點時間
去咀嚼。
其他部份有米血、黑輪、魚板、豆腐跟花枝丸等。
他們家的米血咬起來雖軟,但是米粒偏硬,可以咬比較久,喜歡這種口感的倒是
可以嘗試看看。
個人覺得黑輪普通,但豆腐吸了滿滿的湯汁,味道都有進去,軟嫩好吃;花枝丸
很真材實料,可以咬到花枝塊,好吃!
除了甜不辣外,老夫子還有賣天婦羅等炸物部份。炸物外表金黃色,令人食指大
動,也很多人點。棒棒腿造型很特別,裡頭應該是把肉磨成漿下去油炸;海鮮捲
裡頭有蝦仁,包裹的似乎是花枝漿,味道還可以;旗魚黑輪小小一條,通常我不
會到老夫子來吃這個。
清湯就是老夫子攤位前烹煮黑輪等食材的湯底,以前比較喝得出來是柴魚湯頭,
現在喝感覺變清淡,很難查覺。如果碗中的黑輪吃完後,殘留有醬料,也可以直
接把湯倒入一起享用,滋味比較足夠。
來屏東大概五次有三次都會到老夫子報到,小小的攤位擠著滿滿的人,可見它的
魅力所在。也推薦來屏東遊玩時,可以試試受在地人歡迎的老夫子甜不辣囉!
題外話:黑輪、甜不辣跟天婦羅到底有何不同呢?
在日文中,黑輪是指將食材串成一串後加以烹煮,就像是豆腐類製品、白蘿蔔、
蒟篛等等,日本關西地區這稱這類叫關東煮或關東炊。
天婦羅指的是魚漿類、野菜、山菜類等食物用小麥粉加上蛋液作成麵衣油炸而成
的食物。據說天婦羅是由西班牙或葡萄牙的傳教士傳進日本,而後因日本殖民臺
灣的關係,又傳入臺灣。
不過臺灣的天婦羅跟日本的天婦羅則不太相同,因為臺灣天婦羅多指稱用魚漿製
品所炸成之食材,不含炸蝦、蔬菜類,反而比較像所謂的「魚糕」。
至於台灣的甜不辣現在看來比較偏向黑輪這一範圍,烹調以水煮多,不過也是有
炸的食材,老夫子甜不辣中則兩種都有。
