北港鴨肉羹
小的知道這間鴨肉羹的名氣在三蘆地區已經很響了,但還是忍不住很想講,因為它真的
、真的是太好吃了,不提上一提實在是太對不起自己了。
很少吃得到能夠把「羹」這種中國料理調理得這麼好吃的店家,但位於龍門路靠近堤道
的這家北港鴨肉羹真的是超優的,它的好吃絕非虛名、它的名氣也絕非偶然,而是人家真
的有實力所致,其美味的程度單從店內用餐和攤前排隊人潮便可見一斑。
這間的鴨肉羹的美味要怎麼形容呢?以最簡單的字眼來說,就是會令人「魂縈夢牽」,
標榜以「炒」的方式來製作的鴨肉羹,雖然用料不複雜卻有大學問,光是所使用的羹湯一
喝就可以猜出一定是熬過骨頭或肉的高湯下去煮的,而湯中的用料各有洋蔥、薑絲、筍絲
(但卻不是什麼好筍)、鴨肉薄片、麻油。
洋蔥和薑絲和麻油理所當然的是用以增添風味的,而筍絲基本上是增加脆口感的作用,
但可惜的是所使用的卻不是好品質的筍,而且是機器切的筍絲。羹湯中的鴨肉的量不少,
整碗看起來頗為真材實料,但也許有人會質疑鴨肉卻不滑嫩,其實這不是什麼店家的錯,
而是鴨肉的性質本來就是乾柴澀,光是以這一點,其實這家店處理得還不錯,因為片得很
薄的關係可以改善許多口感上並不優的缺點,而能片得這麼薄,一定也是先冰凍過再機器
切薄的關係,不然這間店一天不知要賣掉幾百碗,光切肉不就切死人了嗎?
機器切沒關係,重點在於煮的功夫要好,鴨肉羹的香氣與美味程度,只要一靠近這間店
聞到它的香味,就會令人流口水忍不住想吃一碗,但令人遺憾的是卻是不太大的一碗,實
在是吃不飽,但沒關係,因為「外帶」的話份量會多一些足以令人吃飽,如果這樣還是不
過癮,只要回家自己先煮一小把麵加進去拌一拌就OK了︿︿,這間鴨肉羹的湯頭真不是
蓋的,吃得出店家的誠意,香味濃郁夠味,尤其是加入了麻油更具有畫龍點睛的效果,實
在是一道三重令人難以忘懷、時時掛心的美食呀!XDDD
