突然想吃炸芋頭相關食物的時候
第一個想到的就是寧夏夜市的劉芋仔

某天晚上突然好想吃炸芋頭商品,偏偏這項食物不是這麼常見
第一個想到的就是寧夏夜市裡,已經很紅的劉芋仔
最早他們是在林森北路擺攤,後來才搬到寧夏夜市
已經有四十多年歷史的劉芋仔,現在由第二代的三姊弟一起經營
數十年的認真經營讓小攤成為寧夏夜市的排隊人氣王,假日有時還要排超過半個小時
剛擺攤就衝過去排隊,也許是前面沒有一次買很多的客人,隊伍的前進速度很快
小攤子就賣兩樣商品,沒包的香酥芋丸和有包的蛋黃芋餅
最低消費兩粒起,不提供紙袋分裝(如要分裝需要增加費用)
現包現做的芋餅看得到真材實料手工製作
選擇產自高雄縣甲仙鄉的芋頭為原料,從削皮、清洗、蒸熟到揉捏成芋泥
光是前置作業就至少要花六、七小時,淺紫色的芋泥直接用顏色告訴我它不添加色素
堆成小山的豬肉脯和炸過的鴨蛋黃是蛋黃芋餅的好夥伴
我很愛吃鹹鴨蛋,也很喜歡肉鬆、肉脯類商品,當然選擇包山包海的蛋黃芋餅(25元)
前、後都在包芋丸、芋餅,不雙面開工根本無法應付排隊人潮
看著老闆用冰淇淋勺將芋泥挖成圓球狀,包入鹹蛋黃與肉脯後下鍋油炸
不一會兒變成金黃色的蛋黃芋餅被撈上網瀝油
散發清新香氣的蛋黃芋餅讓人忍不住馬上大口咬(炸物也是趁熱吃最好吃)
外皮酥脆但是清爽不油膩,口口都有淡雅的芋頭甜
內餡的鴨蛋黃和肉脯讓小點心多了鹹味,口感更豐富
鹹甜交織的滋味除了增加層次,也讓芋餅吃多不生厭
