景美夜市必買是什麼?醒目三角窗的上海生煎包是我的名單內首選
夜市最適合吃生煎包了,因為可以拿著走不礙事,有事沒事咬一口方便極了
雖然總是長長人龍,但是前進速度非常快
反正我每次就是祈禱前面不要殺出一個全給我的人客
早期除了生煎包,還有賣小籠包、鍋貼、饅頭等
後來考量人力等因素,留下銷路最好的生煎包
開業30年的上海生煎包,有很多無法被打倒的要素,除了賣的單一外,就是員工多為自己
人
做過生意的我很清楚知道夥伴是自己人的重要性,理念也比較相同
各位大姊在埋頭狂包,一路走來堅持新鮮現做也是吸客主因(不賣生的喔!)
一開蓋就香氣四散,連本來發呆看天空的路人聞到這味道也加入排隊陣營
就只做肉包、菜包兩種口味,我從一顆8元吃到現在一顆10元
(都還在我可以接受的價錢範圍)
菜包每日有限量,現場很多老主顧一聽到菜包要等一副理所當然的表情
排了將近5分鐘就等到我的生煎包,起鍋前灑上的大把香酥芝麻讓我口水直流
不一會兒一鍋就空了
生煎包要好吃,我的第一要求是著重底部的焦脆度
他們家的生煎包底部有煎到厚度剛好,香酥又不會過於黑乾(老闆,有單賣底部的包子皮
嗎?)
限量菜包是用本土的高麗菜,甜度夠,多汁又口口蔬菜的新鮮脆感
肉包是用本土黑毛豬肉,沒肉有腥味,皮較菜包薄,製作內餡時還加入獨家特調的高湯,
難怪咬下都是鮮美湯汁
隔一段時間再入口,因為有湯汁的保護,生煎包的內餡都還有足夠的溫度,鹹香好吃
