好啦 我知道這樣太敷衍了...
沒辦法 我今天整個被雞腿2.0版嚇到
吃過淡水ㄙㄨㄚ\嘴、景美好吃、石牌的欲罷跟雞房
還有好多其他沒記起名字的店
都沒看過鹹水雞用這麼大的雞腿來弄....
那一瞬間真的有衝動想要多點一隻雞腿...
基本上我一直覺得鹹水雞這種東西就是吃配料
鹽水的味道是重點、然後蔥蔥蒜蒜的加一加就正點了
特別的有炒蔥(淡江ㄙㄨㄚ\嘴)、或生辣椒(景美好吃)
欲罷跟雞房則沒有什麼特別的,就是那個滷汁好吃肉新鮮
德雞雞的配料當然是沒有問題啦
我重口味 也覺得味道很夠了 只是吃之前要沾一下滷汁
尤其那個辣椒 真的很正點(下次我要大辣!)
不過那個蔥的辛味有點重
德雞雞是特別挑的嗎?
有沒有考慮再特別處理過?
德雞雞讓我嚇到的是 我第一次吃到鹽水雞的肉質這麼結實
這大概就是有些人說的硬 有些人說的Q
這個肉質讓我想到以前爺爺自己養的放山雞
以前爺爺會自己養雞 完全不吃飼料的放山雞
每年養個三十幾隻雞用來拜拜敬神
所以養成我一吃就知道是公雞肉母雞肉還是太監雞的刁嘴(但不挑嘴啦)
德雞雞的雞肉當然是沒有那麼正點
不過在鹽水雞裡面 我沒吃過用這麼結實的雞肉來做的
因為會比較難處理
有去買過欲罷跟雞房的就知道
你看他們用剪刀喀擦喀擦喀擦就可以把胸骨剪開 把肉撕下來
這對我以前來說是不可思議的...
因為我們自己養的雞有熟成 所以很結實
肉質結實很難撕開 骨頭之硬可以讓剁刀缺角
所以德雞雞處理起來會比較慢 也會留比較多骨頭
那其實不是德雞雞的技術太差
而是這樣的肉質 就是會比較難處理
一般鹽水雞跟雞排的肉 因為成本跟處理方便考量
那個肉質其實還沒有熟成
所以會發現那個骨頭都很軟、也很好咬斷(不用啃)
德雞雞的骨頭是我頭一次吃鹽水雞可以啃得這麼開心的
很像是小時候吃家裡的雞肉
今天有聽到德雞雞在跟我前面的情侶道歉
說雞胸的另一半沒辦法去骨
我個人覺得那是非戰之罪啦
也可能不是用剪刀就可以克服的問題
建議德雞雞看要不要改用刀來處理
或維持現狀我也覺得不賴啦~
