前陣子北上,格友赤木神神秘秘說要帶我去一個低調鍋物團,
本來我對鍋物興趣缺缺,但大哥一向都能找到驚喜的美味,
便半信半疑地跟他來到這間永和牛雜鍋.
永和牛雜鍋位在永和離福和橋不遠的林森路上.
從公館往永和去,一過橋下去沒多久就到了.
大家都叫它永和牛雜鍋,不過我們到店門口時,我可是一個招牌都沒看到!
只從巷口看到一間掛著[牛雜火鍋˙羊肉火鍋]的鐵皮屋.
進門便可看到店家的鍋底備料區.
湯頭的肉塊都是用大塊的羊肉和牛雜搭配蔬菜熬煮而成.
冰櫃裡的火鍋料及蔬菜盤. 均一價50元, 吃多少算多少囉!
冷凍火鍋料的話樣式可能不像現在的吃到飽店那麼豐富(至少沒有甚麼爆漿起司丸)
但傳統火鍋料像是蝦餃,燕餃,魚餃,蛋餃,魚丸,水晶餃,米血,蟹肉棒...等等都有.
蔬菜也有兩三種以上的選擇.
第一輪,大家很收斂的只拿了這些. 結帳時發現我們總共拿了16盤(笑)
冷凍火鍋料拿得比較少,因為大家想盡量讓湯頭保持清甜, 拿了比較多的蔬菜和豆類製品.
幾分鐘後,我們的牛雜鍋上桌啦! 親眼目睹時真的覺得很驚人,
喝過那麼多的牛雜湯,吃過很多牛雜麵,還真第一次看到料這麼滿的牛雜!!!!
這裡的算法是一份(可共鍋)牛雜湯底300元, 我們第一輪先叫了五份.
後來吃完第一輪的牛雜湯底,才又多加兩份料.
這鍋牛雜湯底最大特色,就是除了牛雜外, 加入大量蒜苗和香菜.
這也是很聰明的作法, 一般牛雜湯的牛雜處理再怎麼乾淨,
煮成湯之後還是有一種內臟臭臭的味道.
但永和牛雜鍋運用這兩樣台式香料把內臟腥臭味蓋掉.
再者,蒜苗和香菜煮過之後也釋放其甜味,讓湯頭更加鮮美.
各式各樣的牛雜, 牛肚, 毛肚, 牛腸...每種料都十分入味.
內臟本身也都處理清洗地很乾淨,絕對不會有食神電影裡雜碎麵那種尷尬的情形出現.
建議湯底上桌後,可以先撈一點不加其他火鍋料的原始湯頭味道,
之後再加入其他蔬菜, 蔬菜的確會釋放甜味,
不過這樣的甜味也相對會讓湯頭喝起來稍微沒那麼濃郁.
驚喜火鍋料, 紅糟燕餃. 如果是一般燕餃就不用介紹了,
加了紅糟的燕餃內餡好香, 一盤被掃光後, 大夥迅速又去拿了第二盤XD
來這裡之前,完全沒想到這麼低調神秘的店居然藏了這麼驚人的美味!
不管是湯頭,份量,用料....完全就是實實在在, 價格也不算貴, 這天分下來一人360元,
吃到肚子凸起來,撐死走出去. 比起外面許多加了高湯粉的涮涮鍋,
我倒覺得用天然東西熬煮出來的湯頭鮮美濃郁多了, 大量的蒜苗吃完之後也讓整個身體熱起來.
這個週末寒流發威,來這裡吃個不貴的牛雜鍋,好好暖一下吧!
