七美南滬港則是在夏天可以望見成排藤架曬臭肉魚的景觀
臭肉魚也是趨光夜間捕撈的魚種
七美附近的漁場在夏天也是臭肉魚的重要產地
清晨漁船回到港後立刻拍賣處理
婦人清洗魚體後漬泡特殊香料便會上架曝曬
大約二天左右就可封裝販售
七美臭肉在澎湖響負盛名
賣點在於有別於本島蒸熟後下去曝曬
七美臭肉是生魚浸泡特殊香料後直接曝曬
也就是這特殊香料就是關鍵點
漬泡特殊香料後的七美臭肉曬乾
料理時需以烤箱或其他烤具烤熟食用
或者最佳方式是油炸酥酥的
不可直接生食
香料在烤熟後完全與魚肉融合
便會讓味道強烈的臭肉魚散發溫和的香氣
這也就是七美臭肉的獨門之處
也就是這樣的秘密香料讓七美臭肉魚乾身價不斐
馬公一斤百元以內的臭肉魚乾在七美要價兩百
但饕客還是絡繹不決
