曾是心頭愛的陳記已隔一段時日未來。
前陣子朋友語重心長:"剛去萬華本店,水準回不去了!"
心想竟有此事,趁著最近剛吃完幾家麵線,
順便重訪一趟愛店。
算是運氣吧,下午抵達時發現門口一張公告,
剛漲幾天,最常點的大碗綜合麵線已漲至NT.75。
可能是二代較有企圖心吧,這幾年不斷擴張開分店,
但也關了不少,好比宜安路上的中和店。
改點小碗(NT.55),上桌挺快,畢竟是小吃。
乍看下真的變不少,最易分辨就是滷大腸,
目測下明顯無當年肥厚,輕盈地與蚵仔浮在碗邊。
麵糊先不與蒜泥混,直接品嘗,卻意外有股怪味,
是往年從未發生過的,混進蒜泥後此現象才銳減。
麵線美味關鍵其一就在湯頭,湯頭不佳就扣分,
靠香菜或蒜泥補救並非不行,看用什麼標準評量而已。
蚵仔依舊是裹粉,但尺寸與肥美度變小,不禁嘆了一口氣。
整體來說就是價格漲了,味道退了。
突然靈機一動,隔日奔至永和直營分店,
當年就是由總店老闆兒子拓展疆域所開的。
兩三年沒來,店長已換人,口音稍重。
同樣點小碗,蚵仔大腸擺得雜亂。
湯頭已無昨日怪味,蚵仔亦肥美勝過萬華本店,
但仔細觀察便可知,
當年巨大肥碩的陳記蚵仔如今確實已成絕響。
為慎重比較,重點一碗大的,這次擺得更隨興,
麵條甚至部分有結塊現象,太不應該!
