糖份>>>>>>酒精+co2+熱量
酵母菌
以葡萄酒為例
每一公升的葡萄汁裡
約17.6克的糖可發酵出1%的酒精約為10ml
所以要釀成酒精濃度12%的葡萄酒
葡萄汁糖份濃度必而達到每公升204公克的糖
發酵最高酒精%約為14%~15%要看溫度而定
而多餘的糖份就不在起作用
為什麼只有14~15%呢?
酒精為酵母菌的排泄物 生物不可能在自己過濃的排泄物生存吧
