Ethyl alcohol metabolism depends on two kinds of enzymes in the body: Alcohol dehydrogenase and acetaldehyde dehydrogenase. In the liquor ethyl alcohol under the alcohol dehydrogenase participation, oxidized into the aldehyde first, then further under the acetaldehyde dehydrogenase oxidized into ethanoic acid which is absorbed by the human body.
80% ethanoic acid will be further oxidized to the carbon dioxide and water while other enter the sugar in the liver and (or) the fat pond, or enters the tricarboxylic acid circulation and oxygenolysis. The ethyl alcohol and the acetaldehyde all may cause the human to have dizziness, to blush, the palpitation too fast, even manner unclear and so on alcoholism phenomenon, but the acetaldehyde function is bigger than the ethyl alcohol.
要如何測乙醛的濃度?
對於醛類的偵測，傳統使用的比色法僅能測定所有醛類的濃度。近20年來，層析法、特別是液相層析法成為受歡迎的偵測醛類方法。
使用液相層析儀篩檢酒類檢體中的醛類，以10 ppm作為篩檢閾值。使用50 mM醋酸銨pH 7.0及甲醇（5：95）為沖提溶劑，整個篩檢過程僅需2.5分鐘，同日間的精確度低於12.5 ％。使用液相層析質譜儀確認酒類檢體中的醛類，則以醋酸銨及甲醇兩種溶劑改變沖提梯度來分離六種醛類。檢驗的389件檢體中，共有2件檢驗出甲醛濃度高於檢驗閾值（10 ppm），32件檢驗出乙醛陽性，而丙烯醛、丙醛、丁醛、苯醛皆未超過標準。快速篩檢的結果與確認方法結果相比較，以10 ppm為醛類的檢驗閾值，敏感度及特異性分別為100 ％及89.9 ％。
