今天好好吃帶您到南投草屯吃蛋酥砂鍋魚頭,湯頭上面有炸得金黃的蛋酥,搭配裹粉油炸
的大頭鰱,絕妙搭配,讓吃過的民眾都回味無窮。大到像臉盆一樣的砂鍋魚頭放到桌上,
幾乎佔去桌子的一半,更特別的是,最上面還覆蓋一層金黃色的蛋酥,蛋酥吸附湯汁後變
得飽滿滑透,口味非常的香甜。
用湯匙大力舀起,蛋酥搭配炸得脆脆的大頭鰱魚,一口蛋酥一口魚,加上湯裡頭還添加了
魷魚,多了海鮮甜味,就是這道砂鍋的魅力,讓不少饕客吃了就上癮、一點都不嫌膩。
好吃的魚頭火鍋,用最新鮮的鰱魚頭下鍋油炸後撈起,趁著鍋裡上百度的高溫,把蛋汁透
過篩網灑下10分鐘後,蛋酥正反面都炸過,接下來就要將海鮮配料川燙去腥,爆香後的蔥
、薑、蒜、辣椒調味,做出了蛋酥脆、魚頭香跟海鮮甜三種不同層次的爽口滋味。
