糖及鹽的分離 - 酒精

請問各位:如果已知將糖與鹽溶於"酒精"後冷卻,因溶解度不一樣,所以會得鹽結晶沉澱.再經過離心即完成糖鹽分離.有沒有哪一本書或引用文獻是說明此現象的原理?謝謝~
