酒精度約9-12,依發酵菌種而異
酒膠:發酵到蒸餾可用約10-11度
一鍋蒸餾
酒頭:開始出酒約70度
酒心:變混濁前約40度
酒尾:有酒味但已無酒精度,冷卻不良的可測到20度的酒精
以上的酒精度是不固定的,它是建立在酒膠的酒精度10%的基礎上,如釀造失敗,酒頭可能就沒酒精度了
