在燒臘食堂食記裡,有板友大推洪記燒臘,於是尋址前來。
店家的料理品項極多,甚至還有燒鵝。本想來份四寶飯再單切
鵝腿,卻被告叫沒有鵝腿,只好改切鴨腿。鴨腿單價一百元,跟勤
記燒臘的鴨腿一樣貴。
王牌四寶飯 125元 鴨腿 100元
四寶飯有三樣配菜,分別為高麗菜、豆干及蒲瓜冬粉,鹹淡一
般,稍油。
四寶飯主菜本就為燒鴨、油雞、叉燒及燒肉。油雞入味,軟而
微澀。燒鴨鴨皮軟薄無鴨脂香,鴨肉同樣稍有澀感。燒肉外皮脆度
一般,豬肉貌似全瘦,其實內裡略帶肥,只是瘦肉口感軟散且少份
鹹香。叉燒為四樣主菜中較合喜好者,蜜汁甜香夠味,雖以瘦肉為
主,但肉質彈中帶嫩。
鴨腿盛盒看來油光四溢,但鴨腿本身則沒什麼油香,肉質也沒
想像中彈嫩。
店家會附上油蔥,可惜有蔥嗆而無油鹹香。
附湯誠意滿滿,整鍋雞鴨骨架一起熬煮,湯鮮而調味不過。
仔細看了菜單才發現鵝腿飯售價為兩百三十元,推測鵝腿一支
要兩百二十元(因為鴨腿飯才一百一十元,單切鴨腿竟然就要一百
元!)。多虧老天保祐,讓我這小氣人士沒能切成鵝腿。
