臨時去永和得和路上的大江戶壽司吃午膳,一段時間沒來,
價位依舊,海鮮丼還是NT.360,另外附一碗味噌海鮮湯。
吧檯前師傅仍然低調地處理食材,外場悄悄端來湯品,
大碗,魚塊多而不雜,豆腐細切,一顆大蝦頭,
簡單俐落的膠質與適當味噌。
大江戶雖與橋壽司系出同源,但這一兩年間卻在品質上逐漸有了分野,
今天魚生切工與擺盤細心與穩重,溫度與鮮度中上。
拌醋淡了些,與初訪印象一致,看來是師傅刻意維持的風格。
這淡雅扮醋以海鮮丼來說還不錯,但與握壽司可能就不大合了,
加點的宜蘭胭脂蝦果然印證了推測。
最後單點的牡丹蝦據說產自日本,除握壽司外,一旁蝦頭微烤,
沒如時下流行地塞飯而是改埋龍蝦沙拉倒是挺令人意外。
付帳時發現這裡是有開發票的,師傅話雖不多,但魚料起碼細心處理,
不若兩天後的橋壽司二店近乎隨意的切工與品質,
當場丟掉一位多年來的忠實顧客。
