如題,可惜不能附照,吃掉了
園區空廚的豆花,今天公司買來吃,有一種像是人造鮭魚卵的東西
我是指,大小像粉圓,但是中空的,內含湯汁,很嫩,一壓即破;不透明
會有興趣是因為,一來沒吃過;是第一次吃到
二來對製造方法有興趣
像一般湯包,在包時要注入湯汁,又怕流出
所以事實上是注入固態油脂,這樣加熱後就會融解成為湯汁
缺點就是熱量太高,根本在吃油;還有冷卻後會有油腥味
也有人包高含水量的蔬菜,比如冬瓜,這樣加熱後就會煮出水來
而我媽做的更清淡,是包冰塊
這麼小粒的,粉圓大小的東西,又用什麼方法注入液體呢?
另外它的縫線(肚臍)又在哪呢?
湯包是包入餡料後才捏實,縫線很明顯
但這空心含湯粉圓,沒什麼縫線
所以它是怎麼做的呢?
