《薄鹽醬油也被爆料》向大廠買生醬汁 屏科大︰業界常態

〔記者邱芷柔、葉永騫/屏東報導〕知名醬油品牌「豆油伯」因產能不足,向金蘭醬油購
買生醬汁,引發消費者疑慮,年收逾千萬元的「屏科大薄鹽醬油」也被網友披露該醬油曾
向金蘭購買生醬汁,開發屏科大醬油的屏科大食品系教授謝寶全指出,小廠向大廠買生醬
汁是業界常態,屏科大醬油曾向金蘭、味全、味王、統一、萬家鄉等廠方購買生醬汁,進
行二次發酵後,再以獨家配方調製成熱銷醬油,這不是秘密。
謝寶全說,目前台灣約有三百家小廠,大多向金蘭、統一、萬家香、味王、味全等五大廠
購買生醬汁,由於黃豆、小麥或黑豆發酵形成生醬汁的過程,不僅需要四至六個月,還要
很大的空間,有些釀造業者會互相協調生產,有些則直接向大廠購入生醬汁,但每家的後
續處理過程、配方與品牌不同,所以會有價差。
謝寶全指出,儘管小廠向大廠買生醬汁不是秘密,但「豆油伯」價格高,消費者難免觀感
不佳,才會引發熱議。
屏東監獄生產的各類醬油在國內也頗受消費者喜愛,經常供不應求,獄方表示,所有產品
的釀造全部在監獄內進行,曾未向其他廠商購買半成品,一般醬油須費時一百二十天以上
,陳年醬油則須一年。
