所有食譜中都說:1、雞肉放入滾水中汆燙,再拿出洗淨2、雞肉先川燙去血水雜質,再入清水中燉煮。如此從熱水接觸冷水,肉質就變硬了,就吃不到軟QQ的肉了啊?有達人可說明嗎?
